Applying a holistic approach combine with nutrition and lifestyle changes, has been Nitchell's solution to effectively manage her health, and a history of food sensitivity and allergy.

​Her journey through a chronic health challenge motivated her to implement significant lifestyle changes and pursue a Master's degree in nutrition. This pivotal change has positively transformed her health and is essentially transforming her life. With a commitment to using her experiences and insights, she strives to empower others to achieve their optimal well-being. 

 

During her three years of providing catering services at a summer camp at Brown University, Nitchell:

  • Instructed young adults and counselors in cooking and nutrition, focusing on those with food sensitivities, allergies, and chronic illnesses.

  • Ensured a safe and healthy dining experience by emphasizing the crucial importance of ingredient monitoring and cross-contamination prevention.

  • Developed comprehensive menus for breakfast, snacks, lunch, and dinner.

  • Prepared innovative, delicious, and nutrient-dense meals.

With over 25 years of experience in the food service industry,

Nitchell is a Certified Functional Nutrition Counselor from the Functional Nutrition Alliance. She holds a Master of Science Nutrition Education degree from American University and a Bachelor of Science in Hotel Restaurant Institutional Management from Johnson & Wales University.​
